    Dry aged beef

    Any of you done it at home?

    I just orders the unia bags. Iím going to try one roast before I invest much. Think Iíll go 60 days the first time.

    Real question. If I donít plan on eating the whole roast, how long might it keep? Or just cut steaks and freeze it? Back in the Unia bag ang go another 20 days?

    Also. If you have dedicated fridge, curious the set up. I have a commercial fridge. Would be easy to get it powered up and aging.

    Funny you mention this, after all the HEB sales on prime rib roast near Christmas I ran across this video. Next time they go on sale I plan on buying a couple and trying it. Cut and vacuum seal individual steaks after they have aged.

    As far as HEB goes, prime is their brand, not prime graded meat. It's Choice, not Prime.

    Age it for 35 days. You'll be fine. You can freeze what you don't eat but I think it degrades the flavor a bit.

    HEB does offer prime, though.

    Yeah, I was thinking sixty days was too much for a first go dry aging.

    I'm pretty sure the Christmas ones were Prime grade but I will pay close attention next time...I often get in a hurry and don't read stuff thoroughly at the store.

    All the HEB Prime 1 I have bought have said USDA Certified Prime on the label. I have not seen Prime 1 that is USDA Choice. That said, the choice whole ribeyes that my brother in law picks up from Costco are usually better marbled than HEB's Prime 1 prime ribeyes.

    Look at the price. That will tell you if its Prime grade. I have never seen Prime grade in a grocery store...ever. Huge price difference. Not calling anyone a liar. I know it can be ordered, just never seen it for sale in the display case. That stuff is all choice grade.

    Havenít tried dry again yet, been wanting to try this with deer. I thought I had a setup to make, but ended up giving my old refrigerator to an employee that house flooded in the September floods and he lost everything, again.

    I do buy Aldi ribeyeís though and let them sit for a week or longer in the Ďfridge before I cook them. I guess this is more of a wet age, but they have a great flavor.

    Brookshire has what they call “prime” but it is probably the shitty end of prime.

    Right now our local HEB has boneless USDA prime ribeyes or 3 bone USDA prime rib roasts for a little over $15/lb. Choice is $10.30/lb and select is about $9/lb. They have wagyu ribeyes for about $37/lb. All of that is in stock right now in our local HEB.
