    Round two.

    Had a 14lb strip in the freezer at work. Decided it was best to consume it.

    Saved off a few lbs for phillyís tonight and leftovers.
    Few 14oz steaks for Friday.

    Iíll put back this 6.5 lbs to age.
    Perhaps I can have friends over in 30 days.

    Another 13lb strip to cut up in 10-15 days to do the same.

    Show on PBS that is called 100 Days,Drinks and Dining. She was at a restaurant in California where the owner/chef dry aged his beef. He said that he has purchased his beef from the same rancher for 16 years. They feasted on three of the same cut of steak, all cooked identically. The steaks had aged three different amounts of time. One was 90 days, one was aged 150 days and the last one 540 days.

    All very well marbled. Trimmed the excessive fat. Salt, pepper only, grilled. She said that each one was sweet in flavor. The older the aging, the sweeter the meat. The 540 day steak was melting and the flavor lingered.
    I've had 30 to 60 day dry aged beef and venison. I found that the longer the age there was a mild pungent flavor at the end of the bite/chew.
